Ever heard of Chitin? It’s a clever ingredient. It can stabilize food or serve as fertilizer or help deliver drugs inside the body.
It can also be used to package food safely against fungi and other foes, all in a biodegradable way.
Shrimp waste plays a huge role as chitin is found in the shell. Chemically extracting it from the shells is not very sustainable.
Lots of energy involved. By-products finding their way into our water.
So researchers in Singapore had second thoughts about some other waste to help and turned to fruit for a change.
They found that the sugar of red grape remainders work best to break down prawn shells. The quality of the chitin from this fermentation process is even higher than the chemical way.
Cheers to that!
